Honey is a super saturated liquid. With this low concentration of water crystals can form. Enjoy the added crunchiness or you can heat to dissolve them. Best done in a water bath in a crock pot on low.
Our honey has been tested for quality. Leaving the sweet liquid enough time to turn from nectar to honey is important for ensuring a long shelf life of the finished product. If the water content is too high, it allows room for (harmless, but flavor messing) yeast to ferment. Most raw honey is 14%-18.6% our 2025 harvest was 15.5%. This means our honey is more prone to crystallization and was harvested from the hive in our dry Colorado climate after waiting long enough for the moisture to fully leave the honey.
